Preamble

The Cape Town Steak Masters Classes are jointly hosted by two truly iconic Cape Town establishments; both of which have been in existence in the leafy University suburb of Rondebosch since 1964.

The Hussar Grill, Rondebosch

This multiple award winning grillroom has been serving the very finest South African beef and game to 3 generations of devotees.

Although the establishment is the proud holder of a Diners Club Platinum Award for its extensive wine selection, it’s also somewhat unique in that guests are always entirely welcome to bring along their own wines at no corkage charge.

Silwood Kitchen

This renowned School of Cookery is widely regarded as being amongst the very best in the world and its graduates can be found in the very top kitchens in the world from Heston Blumenthal’s Fat Duck to Jamie Olivers No 15, Gordon Ramsay’s and even the French Laundry.

Course Overview

The evening classes (18h30 – 21h00) are presented by Greg Bax, The Managing Director of the Hussar Grill in Rondebosch and Silwood’s Chef, Gary Power.

Gary Zonaris, the Hussar’s Group’s master butcher is also in regular attendance to provide expert advice on all aspects of procuring, maturing and trimming the perfect steak.

Additionally, Ernst Gouws Snr, one of South Africa’s leading winemakers is also regularly in attendance to provide the classes with a selection of tastes from their Ernst Gouws & Co Cellars in Stellenbosch.

Topics discussed during the course include:

  • Background to South African beef
  • Identifying top quality beef (grades, markings etc.etc.)
  • Beef maturation
  • Grilling the perfect steak at home
  • Preparing great béarnaise and mushroom sauces

 

All students are presented with a set of printed course notes on arrival for the evening and certificates are awarded at the conclusion of the course.

 

 

Costs & Bookings

The costs for the course are R400 per person which includes all course notes, wine & ingrediants.  The steaks which the students have grilled are enjoyed throughout the grilling process.

Due to popular demand this 1 evening course will be offered every month:

10 March, 7 April, 12 May, 9 June, 28 July, 4 August, 15 September, 6 October, 23 November, 6 December.
